Spring Onion Curry

Ingredients

1 Bunch of Spring Onions, washed
2 Medium Sized Tomatoes, chopped
Salt to Taste
1 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
1/4 Tspn Gingergarlic Paste
2 Tblspn Water
1 Tblspn Oil

Directions
  • Finely chop white onion bulbs separately from the greens & keep aside.
  • Heat oil in a sauce pan on a medium flame; add chopped white onion bulbs & fry until they turn translucent. 
  • Add gingergarlic paste, red chilli powder, salt, turmeric powder & saute for another minute.
  • Now add chopped tomatoes & mix everything well.
  • Cook until tomatoes turn soft & mushy. Add water & cook for a minute.
  • Finally add chopped greens & mix everything well. 
  • Cook for another 2-3 minutes. Turn off the flame. 
  • Serve hot with rice or roti.
