Potato & Cheese Paratha

Ingredients

1 Cup Wheat Flour(Atta)
Salt to Taste
1 Tspn Oil
1/2 Cup Water or add as needed
Oil for Drizziling

For Stuffing

1 Cup Potato Dill Leaves Stir Fry (click on the link for recipe)
1/2 Cup Grated Swiss Cheese or Regular Cheese, tightly packed
1 Medium Sized Onion, finely chopped
Salt to Taste
1/2 Tspn Red Chilli Powder
1/8 Tspn Garam Masala Powwder
1/2 Tspn Chaat Masala

Directions
  • In a bowl; combine wheat flour, water & salt to make a dough. Drizzle oil on top to coat the dough & knead to a smooth ball(add little water if required). Cover with a damp cloth & let the dough rest for 10 minutes. 
  • For stuffing; add Potato Dill Leaves Stir Fry in a mixing bowl & slightly mash potatoes with a spoon (I used leftover potato dill leaves stir fry). 
  • Add all the remaining ingredients listed & mix everything well.
  • Place the dough on a well floured surface or on a roti maker & make 4 equal size balls from the dough. Take one dough ball & flatten it using your palm.
  • Using a rolling pin roll each dough into 4 inch diameter circle & place 2 tablespoons of potato cheese stuffing leaving 1 inch space on the edge. 
  • Pinch all the edges towards the center as shown in the picture below.
  • Using a rolling pin roll each stuffed dough into a 6-inch diameter circle on the floured surface as shown in the picture below.
  • Heat a tawa on medium high flame.
  • Place the paratha on heated tawa & once you see little bubbles, flip the paratha & drizzle some oil on top. 

  • Flip again & drizzle some oil on the other side as well. Flip again & press with a spatula for a minute. Tranfer to a plate.
  • Serve potato & cheese paratha with mango pickle.
Note: You can also use 1 large sized potato (boiled, peeled & mashed) instead of potato dill leaves stir fry.
