3 Cups Cooked White Rice(1 cup uncooked rice yields 3 cups cooked rice)
1 Medium Sized Onion, thinly sliced
4-6 Green Chillies
1 Large Sized Beetroot, peel & cut into cubes
5 Garlic Cloves, peeled
Salt to Taste
1/4 Tspn Turmeric Powder
1/4 Tspn Garam Masala Powder
1/4 Tspn Caraway Seeds (Shajeera)
1 Small Cinnamon Stick (Dalchini)
2-3 Green Cardamom Pods (Ellachi)
1 Tspn Coriander(Dhania) Powder
1/4 Tspn Cumin(Jeera) Powder
1/4 Cup Water
1 Tblspn Oil/Butter

Directions
- Add chopped beetroot, green chillies, salt, turmeric powder, garlic pods, cumin powder, coriander powder, garam masala powder, water to a mixie jar & grind into a smooth paste & keep aside.
- Heat oil in a wide pan; add caraway seeds, green cardamom pods, cinnamon sticks & saute it for a minute on a medium flame.
- Now add chopped onion & saute until they turn translucent.
- Add prepared beetroot puree & mix everything well.
- Cook for 5-10 minutes or until oil separates & add cooked rice.
- Mix everything well & cook for another 3-5 minutes. Turn off the flame.
- Serve beetroot rice with raita.
