Pudina Rice/Mint Rice In Instant Pot

Ingredients

2 Cups Mint Leaves/Pudina, tightly packed & washed
3 Cups White Rice
6-8 Green Chillies
3-4 Sweet Mini Peppers, chopped(optional)
2 Medium Sized Onions, sliced thinly
Salt to Taste
1/4 Tspn Turmeric Powder
1 Tspn Gingergarlic Paste
1/4 Tspn Cumin(Jeera) Powder
1 Tspn Coriander(Dhania) Powder
2 Tblspn Lemon Juice
1/2 Tspn Black Cumin Seeds(Shahjeera)
2-3 Small Cinnamon(Dalchini) Sticks
2-3 Green Cardamom(Ellachi) Pods
4 1/2 Cups + 1/8 Cup Water
3 Tblspn Butter/Ghee or Oil

Directions
  • In a mixer jar add mint leaves, green chillies, salt, turmeric powder, coriander powder, gingergarlic paste, 1/8 cup of water, lemon juice & grind into a smooth paste. Keep aside.

  • Wash & soak rice in 4 1/2 cups of water for 15 minutes.
  • Press SAUTE mode(3 times) on instant pot to MORE. 
  • Once its hot add butter. Once butter is hot enough; add black cumin seeds(shahjeera), cinnamon(dalchini) sticks, green cardamom(ellachi) pods & saute for a minute.
  • Now add sliced onion & saute until they turn translucent.
  • Add chopped mini peppers & saute for 1-2 minutes.
  • Add prepared mint paste & saute for 5-6 minutes or until oil separates.
  • Add cumin powder & mix everything well.
  • Press CANCEL button on instant pot.
  • Now add soaked rice along with water & mix.
  • Properly close the lid & turn the valve from VENTING to SEALING position.
  • Press PRESSURE COOK mode (HIGH Pressure) on instant pot & set timer to 6 minutes. 
  • Once its done; allow the pressure to release naturally (approximately 10 minutes) & press CANCEL button. 
  • Carefully turn the valve to VENTING position. 
  • Open the lid & serve hot with raita.
