1 Cup Sabudana/Tapioca Pearls
1 Medium Sized Potato; boiled, peeled & mashed
1/2 Tspn Green Chilli Paste or 3-4 chopped green chillies
Salt to Taste
1/2 Tspn Gingergarlic Paste
1 Tblspn Lemon Juice
1/2 Tspn Cumin(Jeera) Seeds
1/4 Cup Crushed Peanuts
Few Curry Leaves, chopped
1 Tblspn Oil For Brushing
Directions
- Wash sabudana under running water & soak them in 4 cups of water for 6-8 hours.
- After 8 hours, drain water from soaked sabudana & keep aside.
- In a mixing bowl add soaked sabudana, mashed potato, green chilli paste, salt, lemon juice, cumin seeds, crushed peanuts, curry leaves & mix everything well.
- Make round & flat shaped patties out of sabudana mixture (patties should not be too thick or thin) & place them on a plate (yields 18-20 Patties).
- Coat air fryer basket with cooking spray & arrange the sabudana patties side by side without touching each other. Brush some oil on top of each patty & close the air fryer basket.
- Set temperature to 390F(199C) & timer to 20 minutes.
- Start the air fryer & air fry until sabudana vada turn crisp on both sides, turning once half way (approximately 10 minutes each side).
- Once the timer is up, open the air fryer basket & carefully transfer crispy cooked sabudana vada to a plate.
- Serve crispy sabudana vada with green chutney or tomato ketchup.
Note: Instead of air fryer you can also deep fry the sabudana vada until crisp & golden brown.
