Ingredients
1/2 Kg Mutton bone-in, cut into medium sized pieces
1 Small Sized Green Raw Mango/Mamidikaya; peel, discard the seed & cut into small cubes
150 Grams Gangavalli Kura/Purslane Leaves
1 Medium Sized Onion, thinly sliced
6-8 Green Chillies, cut into 2 pieces
1/4 Tspn Cumin(Jeera) Seeds
1 Tblspn Red Chilli Powder
1/2 Tspn+ 1/8 Tspn Turmeric Powder
Salt to Taste
1 Tblspn + 1/2 Tspn Gingergarlic Paste
1 Tspn Coriander(Dhania) Powder
3 Tblspn Cilantro(Kothmir) Leaves, chopped
3 Tblspn Mint Leaves(Pudina), chopped
1 Cup Water or add as needed
2 Tblspn + 1 Tblspn Oil
Directions
- Discard the ends of purslane & finely chop the leaves. Wash chopped purslane leaves under running water & drain.
- Wash mutton pieces under running water & keep aside to drain.
- Heat 2 tablespoons of oil in a pressure cooker on a medium flame, add chopped onion & saute until they turn translucent.
- Add a tablespoon of gingergarlic paste, turmeric powder & saute for a minute.
- Add red chilli powder, salt & saute for another minute.
- Now add the washed mutton, cilantro leaves, mint leaves & combine well. Add coriander powder & cook for 5-10 minutes or until oil separates.
- Add water & close the cooker lid.
- Pressure cook for 5-6 whistles or until mutton turns soft. Turn off the flame & let the pressure release naturally.
- Meanwhile; in a pressure cooker add chopped purslane leaves, green chillies, chopped green mango, cilantro leaves, mint leaves, 1/8 teaspoon turmeric powder, cumin seeds, teaspoon of gingergarlic paste, 1 tablespoon of oil & close the cooker lid.
- Pressure cook for 4-5 whistles on medium flame or until purslane leaves turns soft. Turn off the flame & let the pressure release naturally.
- Open the lid & add salt as needed.
- Using a masher mash purslane mixture into a paste.
- Open the mutton curry cooker lid & add purslane mixture into it. Mix everything well.
- Cook on a medium flame for 5-8 minutes & turn off the flame.
- Serve gangavalli kura mutton with rice or roti or tandoori roti.
