Aloo Palak Curry/Spinach Potato Curry

Ingredients

250 Grams Spinach Leaves, chopped
1 Large Sized Potato, peeled & cut into 1-inch cubes
1 Medium Sized Onion, finely chopped
1 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
Salt to Taste
1/2 Tspn Gingergarlic Paste
1/4 Cup Cilantro Leaves, chopped
2-3 Tblspn Mint Leaves, chopped
1 1/2 Tblspn Oil

Directions
  • Wash chopped spinach leaves under running water & drain. Keep it aside.
  • Heat oil in a pan; on a medium-low flame. Now add chopped onion & fry until they turn translucent. 
  • Add gingergarlic paste, turmeric powder & saute for a minute. 
  • Add chopped potato & saute for 4-6 minutes.
  • Now add red chilli powder, salt & saute for another minute.
  • Add washed spinach leaves, cilantro leaves, mint leaves & mix everything well.
  • Cover with a lid & cook for 12-15 minutes or until potato turns soft.
  • Turn off the flame.
  • Serve with rice or roti.
