2 Green Chillies
1 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
Salt to Taste
1 Tblspn Lemon Juice
1 Tblspn Cashews, broken
2 Tblspn Cilantro Leaves (Kothmir)
2 Tblspn Mint Leaves (Pudina)
Oil for Brushing

Directions
  • Wash chicken pieces under running water & drain. Keep aside.
  • Add all the ingredients except oil to a mixie jar & grind into a coarse paste.
  • Transfer to a bowl & divide the mixture into 8-12 equal portions.
  • Make oval shape & insert into skewer (i used toothpicks instead of skewers; make sure to soak toothpicks in cold water for 10 minutes before using).
  • Preheat the oven to 400F(204C) & line a baking tray with aluminium foil coated with cooking spray.
  • Arrange the chicken seekh kababs on a baking tray & brush with some oil on top of each kabab.
  • Bake for 20-25 minutes or until golden brown on both sides, turning once half way. Carefully remove the tray from oven & transfer them to a plate.
  • Serve hot with green chutney.
Note: You can also prepare it on stove top by heating a greased tawa on a medium-low flame & place the chicken kabab skewers on tawa. Brush with some oil & roast them on all sides until golden brown. Turn off the flame & serve hot.
