Directions
For Paneer Stuffing
- Add chopped tomatoes into a blender & blend into a puree. Keep aside.
- Heat 1 tablespoon butter in a pan on medium-low flame, add paneer cubes & shallow fry them until the sides turn light brown. Transfer them to a plate & keep aside.
- Heat remaining butter in the same pan on a medium flame, add chopped onion & fry until it turns translucent.
- Add gingergarlic paste & saute for a minute. Now add red chilli powder, salt, turmeric powder, garam masala powder, coriander powder & saute for another minute. Add cilantro leaves & mix everything well.
- Add pureed tomatoes & cook for 2-3 minutes.
- Add water, cashew paste & cook for another 2-3 minutes.
- Finally add fried paneer cubes & saute for another 2-3 minutes. Turn off the flame.
- Take one chapathi/roti & spoon the paneer mixture lengthwise on the center of the chapati. Sprinkle 1/4 teaspoon chaat masala powder, chopped onion on paneer mixture & roll the chapathi/roti.
- Repeat the process with remaining chapathis.
- Serve immediately.
Note:
- For cashew paste; soak 8-10 cahews in 1/4 cup warm water for 20 minutes & blend into a fine paste.
- You can prepare chapathi & paneer stuffing in advance. Assemble them into wraps only when you are ready for serving.
