Egg Bhurji

Ingredients

4 Eggs
1 Medium Sized Onion, finely chopped
1 Medium Sized Tomato, chopped
1 Tspn Red Chilli Powder
Salt to Taste
1/8 Tspn Turmeric Powder
3/4 Tspn Gingergarlic Paste
1/2 Tspn Coriander(Dhania) Powder
1/4 Tspn Cumin(Jeera) Seeds
1/8 Tspn Mustard(Avaalu) Seeds
1 Tblspn Cilantro(Kothmir) Leaves
1/4 Tspn Garam Masala Powder
2 Tblspn Oil


Directions
  • Whisk eggs in a bowl with a spoon.
  • Heat oil in a pan or kadai on medium flame; add cumin seeds, mustard seeds & saute for a minute.
  • Now add chopped onion & fry until they turn translucent.
  • Add gingergarlic paste, red chilli powder, salt, coriander powder & saute for another minute.
  • Add the chopped tomatoes & mix. Cook until they turn soft & mushy. 
  • Now pour in the whisked eggs & scramble lightly. 
  • Once it is cooked add garam masala powder & mix everything well. Cook for 2 more minutes & turn off the flame.
  • Finally add cilantro leaves & serve with tandoori roti or roti or lachcha paratha.
