Poori Besan Curry

Ingredients

2 Tblspn Gram Flour/Besan
3/4 Cup Mixed Vegetables (chopped carrots, chopped french beans, green peas, sweet corn); optional
2 Medium Sized Boiled Potatoes
1 Medium Sized Tomato, chopped
1 Medium Sized Onion, finely chopped
3-4 Green Chillies, chopped
1/8 Tspn Turmeric Powder
Salt to Taste
1/2 Tspn Gingergarlic Paste
1/2 Tspn Coriander(Dhania) Powder
1/4 Tspn Garam Masala Powder (optional)
2 1/2 Cups + 1/4 Cup Water
Few Curry Leaves
1/4 Tspn Cumin(Jeera) Seeds
1/4 Tspn Mustard(Avaalu) Seeds
2 Tblspn Oil

Directions
  • In a bowl; add 1/4th cup of water, besan & mix with a spoon to form a smooth paste without any lumps. Keep aside.
  • Peel & cut 1 1/2 boiled potato into 1-inch cubes. 
  • In another bowl peel & mash remaining 1/2 boiled potato. Keep aside.
  • Heat oil in a pan; on a medium flame. Add cumin seeds, mustard seeds, curry leaves & saute for a minute. 
  • Now add chopped onion, green chillies & fry until onions turn translucent. 
  • Add gingergarlic paste & saute for a minute. Now add turmeric powder, salt & saute for another minute.
  • Add mixed veggies & saute for 5 minutes.
  • Add chopped tomato & mix everything well. Cook until tomato turns soft & mushy.
  • Add chopped boiled potato, mashed potato & mix everything well.
  • Add 2 cups water & let it come to a boil. 
  • Now add besan water by stirring continuously & cook for 10-15 minutes or until gravy thickens. Add coriander powder, garam masala powder & mix everything well.
  • Turn off the flame.
  • Serve besan curry with poori or dosa or roti.
