2 Tspn Red Chilli Powder

1/2 Lemon Sized Tamarind or add as needed, extract pulp
1 Tspn Coriander(Dhania) Powder
1 Tspn Dry Coconut Powder
1 Tspn Sesame(Til/Nuvvulu) Powder
1 Tblspn Peanuts(Groundnuts/Palli) Powder
1/4 Tspn Garam Masala Powder(optional)

Directions
- Peel the outerskin, thinly slice the bitter gourd & deseed as shown in the picture below. Soak them in salt water for 5 minutes & drain.
- Heat oil in a sauce pan on a medium flame, add onion & fry until they turn translucent.
- Now add gingergarlic paste & saute for a minute.
- Add chilli powder, salt, turmeric powder, dry coconut powder, sesame powder, peanut powder, garam masala powder, coriander powder & saute for another minute.
- Now add sliced bitter gourd & saute for 3-5 minutes.
- Add water, tamarind extract & mix everything well.
- Cover with a lid or cook on a medium flame for 15 minutes or until bitter gourd turns soft.
- Remove the lid, add jaggery & mix everything well.
- Turn off the flame & garnish with a cilantro leaves.
- Serve with rice or roti or tandoori roti.
Note: You can also prepare capsicum masala curry by following the same directions; replace bitter gourd with capsicum(cut into 1 1/2-inch cubes).
